BAKED OATMEAL
2 & 2/3 cup oatmeal (quick or old fashioned)
1/2 cup raisins (or Craisins)
1/3 cup brown sugar
1 tsp. baking powder
1 tsp. cinnamon
1/4 tsp. salt
1/2 cup walnuts
4 cups milk
2 eggs, lightly beaten
2 Tbsp. butter, softened
2 medium Granny Smith apples, peeled and diced small (about 2 cups)
Heat oven to 350 degrees
Combine oats, raisins, br. sugar, baking pwd., cinnamon, salt and walnuts.
Stir with a fork to combine well.
In a separate bowl, combine milk, eggs and butter. Add to dry ing. and mix.
Spray a 9 x 13 pan with Pam and pour in mixture.
Bake for 45 minutes, uncovered
Serve warm as is or with maple syrup
