Meatloaf Recipe
I just LOVE this meatloaf recipe, which I have put a bit of a twist on. The recipe actually says to make into individual size loaves, but I don't do that. I usually make at least a double recipe, and freeze half. I have made HUGE ones (like 5x the recipe) for a crowd, and it has always been a hit. Usually, I use either all ground turkey, or half ground turkey and half ground beef. If you plan to freeze it, do so before baking.
1 egg
3/4 cup milk
1 cup shredded cheddar cheese (I have used mozzarella or provolone as well)
1/2 cup quick-cooking oats
1/2 cup chopped onion
1 tsp salt
1 pound ground meat
2/3 cup catsup (when making a larger recipe, I use tomato sauce instead)
1/2 cup packed brown sugar
1 1/2 tsp prepared mustard (I like using dijon)
In a bowl, beat the egg and milk. Stir in remaining ingredients except meat. Add meat and mix well. Shape into 8 loaves if desired, or just make one big loaf; put in a greased casserole dish. Bake, uncovered, at 350 degrees for 45 minutes. One recipe yeilds eight servings.
Hint: I sometimes add a bit of smoke flavoring as well. Yum!
