I found a recipe for a cornbread taco bake which I tweaked a little. Ingredients are as follows, or suggestions anyway, if you cook like me. :)

1 1/2 lb of ground beef     

1 pkg taco seasoning prepare as instructed

1 can of whole kernel corn

1/2 cup chopped green pepper

1 8oz can of tomato sauce

1 pkg of cornbread mix

1 2.8 oz can of French fried onions

1/3 cup shredded cheddar cheese

Before we get into the preparation I am going to inform everyone about the changes I made. I use ground turkey, a can of Mexican corn which already contains green peppers plus red, no French fried onions and a combination of Colby and Monterey Jack or taco. I have also substituted the corn for chili beans which is preferred over the corn.

Warm up that oven at 350 degrees, while browning the meat get started mixing the cornbread mix. The Pyrex dish I use measures 3/4 x 7 1/2 x 3/4, utilizing a bigger one will make the cornbread thinner on the bottom. Once the cornbread is in the baking dish cook it until it almost done, a tooth pick pulled should reveal some moisture. Once you have drained the meat add your taco seasoning. Then mix in the tomato sauce and corn or the chili beans. Sprinkle generously with cheese and bake until the cheese is either melted or a golden brown which ever you prefer.
