Fulltime Mama
My name is Elizabeth, and I am the happy wife of ten years to Fabio and fulltime mama to four beautiful children: Joshua-9, Dominique 7, Israel- almost 5, Johann-3 and expecting a new baby in April 2012! Dinner In a Pinch!

I try to have these simple ingredients on hand for those times when unexpected things come up - like the other week when I found out with a half an hour's notice that the fun fair we were going to was NOT serving hamburgers like last year! Instead of driving to McDonald's, I whipped this up in even less time.
You need:
canned chicken or tuna
mayonnaise
tostadas
optional - vinagrette

First, open your tuna or chicken and mix in mayonnaise to your taste:


Next, if you like, make a vinagrette. This is similar to what Mexican's call "pico de gallo". I used red and yellow tomatoes, onion, and green pepper. Drizzle some white vinegar, or fresh lime juice, over it, sprinkle with salt, and you are good to go!


This is what the tostadas look like. I usually get mine at Wal-Mart. Most major grocery stores sell them, or Mexican shops:


That's it! Call your family for dinner! 


To assemble, spread the chicken or tuna mix onto a tostada, and then apply some vinagrette on top! WALA! Tasty! My family LOVES this meal!!  And I love how long it takes to prepare. :)
