I am so blessed to be married to the most wonderful man in the world for 14 yrs, and to be homeschooling my 4 children for 9 yrs so far! I love the Lord with all my heart, all my soul, and all my mind! God is awesome!
If your family is anything like mine, then you can go through a box of granola bars pretty quick! We love granola bars! I was thinking one day that I should start making them myself so that I could make them a little healthier than the store bought ones. I found a recipe that was close to what I was looking for, but I changed a couple things. So, here's the base recipe:
1 cup of Honey
1 cup of Peanut Butter
3 1/2 cups of Quick Oats
Melt the honey and peanut butter in a sauce pan over med heat, then add in the oats and stir. (See, I told you it was easy!)
At this point you can add in anything that you like. Such as chopped up peanuts, raisins, coconut, carrots, dried cranberries, chocolate chips, or any other chopped up nuts or fruits. The options are limitless!
My husband loves for me to substitute a little bit of molasses for some of the honey( about 1/8 cup of molasses and 7/8 cup of honey). We use extra crunchy peanut butter and then add in extra chopped up peanuts.
After you stir in your other ingredients,  press into a pan or dish. Let cool, then cut into bars or bite size squares. These granola bars are chewy(or soft), but if you like them crunchy, you can bake them @ 350 for 25 minutes. Enjoy!

I just wanted to add that I made these yesterday with regular old-fashioned oats, as opposed to instant, and they turned out great! They were a big hit with the whole family!

I've eaten these granola bars, and they beat ANYTHING you can buy in the store for taste! Plus they are healthier!
