                   Easy Quiche



8-eggs
1-2 cups chopped veggies, use your imagination (or whatever is in the fridge) we like broccoli, onions, spinach, mushrooms & bell pepper.
1 cup chopped leftover meat
1/2 -1 cup cheese
1/2 cup flour
salt & pepper to taste

Grease 2 qt. casserole dish and preheat oven to 350 degrees.
Place veggies, cheese and meat in casserole. Whisk up eggs with flour, salt and pepper.
Pour egg mix over veg/meat/cheese mix. Bake for 30min. until light brown or eggs thoroughly cooked. 

This is great for a quick meal- breakfast, lunch or supper. Served with fresh fruit and whole grain bread of muffins. 
It is very easy to double for a crowd, and can also be made ahead and frozen.
