I am a homeschool mom with six children.
   Please excuse the lack of measured ingredients, but I have created this recipe on my own. I use whatever meat or left over veggies in the fridge. I make large portions and don't measure on this one. Nonetheless, maybe, some of you will add it a favorite meal as we have.

Healthy Breakfast Casserole

shredded hash browns
your choice cooked meat (chopped turkey, ham, low fat sausage)
your choice vegetable (spinach leaves, green  and red peppers, onions, mushrooms..)
your choice of cheese (cheddar, parmesan...)
dozen eggs mixed with some milk (making a scrambled egg mix)
seasonings such as: salt, pepper, basil, paparika...(whatever seasonings you like)

Grease a rectangular casserole dish. Then layer the following ingredients: the hash browns (enough to cover bottom of the pan and about a fingertip deep). Then place the meat on top. Next, place the veggie over it. Then sprinkle the cheese. Follow with the mixed eggs and milk. Last, place the seasonings. Depending on the depth and size, cook for about 35-45 minutes on about 350 degrees. Poke a fork in it to see if it is dry before removing.
