I love butter.  I love that it is less processed than margarine.  I love the taste.  I love that the fats in it are good for growing brains.

I do NOT love the cost of butter.  I also do not love taking a brick of butter out of the fridge and mangling a slice of bread as I try to spread it.

The solution?  Mix it with canola oil.  Studies have shown that canola oil and eevo are about the same for heart healthiness, and canola oil doesn't have the olive flavour of eevo.

Find a container that you can keep in the fridge.  I use an old margarine container, but any container with a lid will work.  Now, with a mixer, mix a pound of butter (room temp) with some oil.  The amount really depends on you.  The more oil you use, the more diluted the butter flavour, but the easier it is to spread.  I use one cup oil to one cup butter.  You need to mix for several minutes until it is well combined.  I like to end with a minute at high speed to make it more of a whipped butter texture.

You need to keep this in the fridge, as the butter and oil will separate if you don't.

Ok, I get it! :) LOL. I wonder how much evoo you could add without it tasting too "olive-y"? I prefer using olive oil to canola oil...
