My name is Elizabeth, and I am the happy wife of ten years to Fabio and fulltime mama to four beautiful children: Joshua-9, Dominique 7, Israel- almost 5, Johann-3 and expecting a new baby in April 2012! I might add pictures one of these days when I get around to making gnocci, but this will have to do for now. :)  Sorry the measurements are not exact. I learned from my mother-in-law, and I don't have an exact recipe.

Cook some potatoes. Not red potatoes, but something a little more solid. We prefer to boil them whole, in the skins. Then after they are tender, drain the water and the skin will easily slip off. You might have to let it cool a little unless you want to play "hot potato". :)

Okay, once your potatoes are cooked and peeled, put them in a bowl and mash them. My mother-in-law likes to do this with a fork to get them smooth, but any mashing utensil should work.

Now, get an egg. One egg should work fine for about 6-8 med potatoes. Separate the yolk and add it to the potatoes. You won't need the white. Mix the yolk through your mashed potatoes.

Now, get out your flour and add some into your potatoes. Stir around and see if you need to add some more. You should add some until it is a pliable texture that you will be able to roll into a ball. If your potatoes are too sticky, add more flour.

Once you think you have the right texture, take a little ball of "dough" and roll it out like a play-dough worm. :)  Then cut or pinch it off into about one inch pieces.

Bring a pot of water to boil on the stove. Drop your pieces of gnocci into the boiling water.  When they are done, they will float and you can fish them out.

Brazilians eat this with ground beef and red sauce, like we would spaghetti. Olive Garden serves it in a super creamy chicken soup. Take your pick!



***Freezing TIP***
You can freeze your gnocci before boiling them. They freeze great! Then you can just pull them out when you need them and boil and you are all set! So, I like to make at least double what I think I will need for a meal, and freeze half. Makes the next meal prep super easy!

I actually think there might be another way of making them with *just* flour, but the real way, the best way, is with potatoes. ;)

ha! i had no idea i was eating potatoes at olive garden! i thought it was some kind of pasta dumpling. hmm. now, any idea how to make the creamy sauce with spinach?
