Grandpa's Southern Gravy and Biscuits
Sausage milk onion flour salt and pepper biscuits (make your own or refrigerated)
Cook up sausage (turkey sausage is healthier but pork tastes best-or mix half and half). Drain all oil. Add salt and pepper. Then add a couple of tablespoons of flour (white or wheat). Add a couple cups of milk to your liking of how much gravy. Pour over some warm biscuits.
Daddy's Favorite Soup
1 pound Sausage 1onion 2 garlic cloves pinch of red pepper 28 oz. chicken broth 3 potatoes salt ground pepper a bunch of kale (wash well with soap to get off poisons) 1 cup heavy cream
We found this recipe that was put in our newspaper. It is my husband's favorite.
Cook sausage and drain. Add onion, garlic, red pepper, salt, and pepper. Cook until onion is translucent. Pour in chicken broth. Put cut up potatoes in and cook until tender with some firmness. Add the kale. Cook a few minutes. Add the cream and cook a few more minutes.
Fast and Fabulous Creamed Spinach Ravioli
a box of creamed spinach bag of frozen ravioli Parmesan cheese evaporated milk or cream salt and pepper mushrooms cilantro onion garlic (crushed or cut small)
Boil the frozen ravioli, drain and set aside. Cook two cloves of garlic,onion, and mushrooms in some olive oil. Add spinach. Then add milk. cook for just a minute or two. Add the ravioli. Top with parmesan cheese and fresh cilantro (Cilantro gets metals out of the body, but if you don't like cilantro you can use fresh basil.).
My Favorite Tomato Basil Stir Fry
3/4 lb. asparagus (use potato peeler to peel 1/4 to mid way or so down to get rid of woodyness) 1/4 cup chicken broth 2 tsp. soy sauce 1 tsp olive oil with basil flavor (always get expensive olive oil so it doesn't have the pungent taste..but can use regular olive oil) 1/2 t grated ginger root 4 green onions, sliced to bias one inch pieces 1 1/2 c. sliced fresh mushrooms 2 small tomatoes fresh basil
Mix chicken broth, soy sauce, and cornstarch-set aside. Stir fry ginger root in hot oil for 30 sec. Add asparagus and green onion. cook 3 min. Add mushrooms, stir fry one minute. When veggies are tender they are done so add your sauce quickly and cook just another minute until bubbly. Then add the tomatoes. Heat through and then serve.
Great Grandma's Cucumber Salad
1 tsp. sugar 1/2 tsp. salt 1 tbs. vinegar 3 tbs. salad oil 3 cucumbers sliced
Mix and let sit over night.
Hannah's favorite salad
Cook up some fresh pecans in a little buttter and brown sugar. Put aside. Take various greens and place blueberries and strawberries on top. Add the pecans. Add some Feta cheese. (I like fresh basil with mine but it might be a bit more adult in flavor). Use a good (not cheap) Balsamic vinegar dressing (strawberry dressing is good, too).
My favorite "Basic Vinaigrette" I found this in a Martha Stewart magazine. It is amazing!
2 tbs. good quality white wine vinegar 1 tsp. Dijon mustard 1 small shallot finely chopped 1 tsp. coarse salt 1/4 tsp ground pepper 6 tbs. olive oil
Combine the vinegar, mustard, shallot, salt and pepper in a bowl. Allow the ingredients to macerate for 10 minutes. While whisking, slowly add olive oil until the mixture is emulsified. Adjust seasoning with salt and pepper if desired.
Conrad's Sweet and Sour Chicken (our Chinese friends)
Marinade 1/2 t. salt 1 Tsp. cornstarch 1/2 TBs. soy 1 T cold water Sauce 3 Tbs. vinegar 4 Tbs. sugar 4 Tbs. catsup 5 Tbs. cold water 1 t. salt 1 t. sesame oil Other ingredients: peppers pineapple chicken rice
Cut chicken into cubes. Marinade minimum 1/2 hour. Cut peppers and pineapple into squares (can use canned pineapple). Set aside. Heat 6 cups of oil. Coat chicken with 1/2 cup cornstarch. Fry chicken for about four minutes or until done. Remove chicken. Put a Tbs. of oil in skillet and fry pepper and pineapple stirring constantly. Add sauce until thickened Turn off heat. Add chicken. Mix well and serve on a bed or rice.
