Pancake Mix Recipe

 

Buying commercial pancake mix IS easier than making your own from scratch, but it is not the most cost effective, nor is it the healthiest. By making your own mix, you can benefit from the convenience of a mix in the morning, while saving $$$, and controlling exactly what goes into your family’s breakfast. 

 

PANCAKE MIX

10 cups all-purpose flour

1½ cups instant nonfat dry milk

½ cup sugar

Ό cup baking powder

2 tbsp salt

Combine all ingredients in large bowl. Stir well to blend. Put in a large airtight container. Label. Store in a cool, dry place. Use within 6-8 months. Makes about 13 cups of pancake mix.

 

I have picked up several large Tupperware canisters at garage sales and thrift shops which are perfect for storing this sort of thing in!  I recommend that you write or print out the recipe below and tape it to the container you store your pancake mix in, so that when you get ready to make your pancakes, it will be right there ready and you don’t have to go hunting for the recipe. :-)

 

PERFECT PANCAKES

1½ cups pancake mix (above)

1 egg, slightly beaten

1 cup water

3 tbsp oil

Put pancake mix in medium bowl. Combine egg, water and oil in a small bowl. Add egg mixture to pancake mix. Add more water for thinner pancakes. Blend well. Let stand 5 minutes. Cook on a hot oiled griddle for about 3-4 minutes, until browned on both sides. Makes 10-12 four-inch pancakes.
