(Excuse the lack of measurements. I am not one to measure. Adjust these to your liking. Be sure to use sea salt. It really changes the flavor of the veggies.)
Spinach Dressing Honey onion or diced shallots (milder onion) butter red wine vinegar salt and pepper spinach
In a hot skillet melt the butter (maybe a tbs.?). Cook the onions until translucent. Add the red wine vinegar (maybe two tbs.?). Add the honey (maybe a tbs.). Then a pinch of salt and snall shake of pepper. Now place this hot saucy dressing over the raw spinach (baby leaves are our favorite) and serve asap. My children gobble up their spinach. This is one of their favorite recipes.
Brown Sugar Carrots carrots brown sugar butter
My children love this fast easy recipe. Just boil the carrots (use a bag or two of baby carrots if you need a fast veggie). After draining the water from the carrots, add a tbs. of butter and a tbs. of brown sugar (adjust to amount of carrots). Stir this all on the hot burner that was just turned off. You want it to melt and carmelizes a bit. Serve.
Asparagus asparagus salad dressing mustard
Steam the asparagus and set aside (don't forget to salt with sea salt). Mix salad dressing and mustard to your liking. Put a dab of this dressing beside it for the children to put on their asparagus into.
Sweet Potatoes Cooked sweet potatoes Cilantro Salsa black beans (drained and rinsed can of bb) sour cream
Okay, this is a really weird and unusual recipe. Try it on just one as a sample one night to see if your children like it. Mine do, but it isn't for everyone.
After cooking the sweet potato add the black beans, salsa, sour cream, and cilantro. I love this recipe. However, we also like a different sweet potato recipe:
More Normal Sweet Potato Recipe(he,he) Another one is just a bunch of cooked sweet potatoes mashed with a little butter, cinnamon or nutmeg with a small amount of orange juice (maybe half a cup depending on how many potatoes-just enough to make it easy to mash together) (or brown sugar instead of orange juice), in a shallow pan. Put marshmallows over the top (put in the oven to bake a bit-just ten to twenty seconds under broiler gives it a browning-if you like).
Green Beans
Steamed or boiled greens (under cooked) mixed on a hot burner with a little sesame oil, garlic, and sesame seeds. Top with sea salt.
Corn
Melt butter with garlic and a little sea salt. Dip corn cobs in this. Sprinkle with a little fresh parsley if you like.
